Making cherry wine at home using a simple recipe is not at all difficult. For this you do not need abstruse devices, you can get by with ordinary kitchen utensils. If the berries are in abundance, compotes and preserves are prepared, then it is simply necessary to try it in winemaking. If this is a new business, then you should carefully study the technology and follow its instructions.
The subtleties of making cherry wine
Sweet cherries have low acidity and weak aroma, they cannot be used for winemaking, they need additives. As a rule, more acidic berries are added. Can add:
- yoshtu (hybrid of currants and gooseberries).
If it is decided to make wine only from cherries, then spices are used for flavoring:
- star anise;
- Bay leaf.
If you are new to winemaking, try to add spices in moderation.
Ingredient selection rules
Sweet cherry is not a simple berry. It is super tasty when fresh, but the wine can come out with mediocre taste. As a rule, non-conditioned fruits are allowed for processing. However, they must be:
- high quality;
- without rot and fungus;
The penetration of pathogenic microflora into the product will lead to the fact that the wine will have to be disposed of.
How to make cherry wine at home
To prepare a hoppy drink, use the proposed options.
Classic simple recipe
To prepare dry wine, follow this recipe:
- cherries - 5 kg;
- sugar - 1 kg;
- water - 1 l;
- tannin - 15 g;
- raisins - 100-120 g;
- citric acid - 20 g.
The technological process is as follows:
- Remove the bone and crush the pulp with your hands.
- Pour the pulp with water, bring to a boil and simmer for 10-12 minutes.
- Refrigerate and strain.
- Add the ingredients from the recipe to the resulting juice, close the water seal and send to fermentation.
- When fermentation is over, decant the supernatant with a tube.
- Leave the semi-finished product to infuse at room temperature.
- Decant again after 6-7 days. And so on until the top layer is completely brightened.
- Pour the wine into bottles and seal tightly.
- Store in a cool place when lying down.
The wine prepared in this way will be ready in 2-3 months. It does not need long exposure.
Option with bones
You can make wine with seeds, but only taking into account some of the nuances. The stone gives off bitterness. Wine made with the pits will have an unpleasant odor and a bitter, astringent taste. When harvesting berries, as a rule, the seeds are removed, and only 100-200 g per 5 kg of fruit are left.
From yellow cherries
The step-by-step way of making wine from yellow fruits does not differ from the classic version. If you use only one variety, you get a product with a beautiful amber shade.
Option with cherries
Assorted wine with cherries is the most common product. However, it is recommended to do it only if the cherry is late in ripening, and the cherry is early.
Using classical technology and recipe, the amount of citric acid is halved. The proportion of ingredients is taken at the rate of 1: 1.
To prepare a noble drink, you need a concentrated compote. And even in this case, it is very difficult to balance it in terms of acid and sugar.
The ripening periods of cherries and strawberries often coincide. For wine, berries are taken in equal proportions. You can cook in two ways:
- Boil the berries all together and get juice, as in the classic version.
- Boil only cherries, and add strawberry juice from fresh berries.
If you use vodka, then we will talk about liqueur. The berry is poured into the jar by 2/3, a glass of sugar and water is added, and then vodka is added to the top. Kept in the cold for 2-3 months.
You cannot make wine without sugar. The fermentation process is the conversion of sugars into ethyl alcohol. No matter how sweet the berry is, sugar is needed to make a hoppy drink.
Wine with the addition of raspberries turns out to be aromatic, beautiful and very tasty. However, raspberries ripen a little later than sweet cherries. Craftsmen have learned to use last year's frozen berry, which is always in stock.
The preparation of such a wine does not differ from the classic version. The berries are taken in a 1: 1 ratio and boiled.
Storage of the finished product
The resulting product is stored in basements at low temperatures. Cherry wine does not need long storage and aging.
The drink has a sediment - this is normal, it proves its naturalness. Do not shake the wine before serving.
