Victoria gives quite large fruits, and in order for them to be completely boiled, you need to accurately calculate the time. Pour ready-made jam into jars should be hot, and then immediately roll up. This will reduce sugar consumption during cooking. One kilogram of berries will need only 0.5 kg of granulated sugar.

If it seems that the jam is not thick enough, then during the last cooking it should be boiled to the desired consistency. As it cools, the dish becomes thicker, which should definitely be taken into account. To check, you can drop a drop of syrup on a plate. If it does not spread, then the dessert is ready.

Victoria's preparation

Large berries are poorly suited for making jam, so they are sorted in advance and medium-sized and well-ripened are selected. After that, the strawberries are thrown into a colander and washed. Excess moisture should drain off after a while, after which Victoria should be laid out on a paper towel and dried. Tails and stalks are removed from the fruit, and those that have signs of spoilage are discarded.

Over a long history, a huge number of recipes have been created for the preparation of the most delicious and healthy jam from the fruits of Victoria (strawberries). A simple recipe for the winter

To close a healthy delicacy with whole fragrant berries, you will need to take:

  • granulated sugar - 800 g

Cooking technique

In order to make Victoria jam, the standard ratio of berries and sugar is 1: 1. However, you can use less sugar as well. At the same time, dosage less than 650 grams is not allowed. Otherwise, the fruits will "play". So, the dessert is prepared according to the following scheme. The berries are laid out in a suitable container in layers, each of which is sprinkled with sugar.

If at the end it remains, then simply pour over Victoria and level. Leave to infuse overnight so that the juice stands out well. In the morning, boil and boil for 7 minutes, then remove the foam and allow to cool. This operation is done 3 times. To make the delicacy thick, cook it for a third time longer. As soon as the drop does not spread on the plate, the dessert can be laid out in a seaming container.

The recipe "Five minutes"

This technology allows you to preserve the maximum amount of vitamins and nutrients from fresh berries. You will need to take:

  • granulated sugar - 0.7 kg;

Cooking method

Sort the berries, rinse, cut large into slices. The syrup must be boiled separately in an enamel container over high heat, pouring 250 ml of water with sugar. Fruits are poured into boiling syrup and boiled for 5 minutes. Stir the dish with a wooden spoon. Done!

Frozen Victoria Jam

How to store Victoria strawberry jam

It is important not only to prepare, but also to properly preserve the Victoria jam. If the dish was cooked without boiling or closed with leaking lids, then such a product is best kept in the refrigerator. After opening, the container is stored only in the refrigerator and no more than 2 weeks. The dessert can be used both for direct consumption and for the preparation of culinary masterpieces.

Hermetically sealed jars of well-boiled Victoria jam are sent to a dark and cool room. The ideal place would be a basement with moderate humidity, in extreme cases, a pantry is suitable. The shelf life of such a delicacy is about 3 years.
